CUIXOT DE PORC NEGRE is born with the idea of elaborating the first Mallorcan Black Pig Ham. Jose Abellan, founding partner of the company, has dedicated his professional career to the Jamón culture and research into the world of Jamón Ibérico as well as being one of the best Master Carvers in Spain. Passionate about the native Mallorcan pig, he is fond of traditional slaughtering with his family, and is passionate about the transformation and production of food products derived from the Mallorcan Black Pig.
He spends his life to study and dedicate himself to a professional career in the "Culture of Ham". Enriching himself with a great deal of information, research and studies in the world of Iberian Ham, he became a Professional Ham Cutter.
He continues to acquire experience and knowledge and goes deeper and deeper into the world of ham and its culture, becoming a great Master Ham Cutter and sharing courses and training at the University.
