BLACK PORK HAM CROQUETTES

Ingredients


150 grs. Black Pork Ham (shavings)
2 eggs
1 Onion
2 cloves Garlic
1 soup spoon Butter 
Olive Oil 
Salt 

For the dough:
Wheat flour
Milk
Nutmeg
Salt

For the breading:
Wheat flour
1 Egg
Bread crumbs

Steps

The first step will be to put the eggs to cook along with some salt, we will let it cook for 10 minutes, once ready we will put them in cold water, it will help us to peel them and then we cut them in half so that they finish cooling

 

 


Cut the onion into brunoise and garlic finely chopped, the ham is said to be in shavings and cut a piece of butter

We put it in a frying pan and when it melts add the garlic, let it brown and when it starts, add the onion, season with salt and pepper and let it boil, when it is transparent add the ham, sauté it so that it mixes and gets impregnated with the taste of the cold meat, after a few minutes we pass it to a mixing glass together with the eggs and crush it to taste, there are those who like to notice pieces and there are those who do not

 


Once crushed we pass it again to the frying pan, we add a little oil if we see that it is necessary, we throw the flour and we mix it so that it is gilded, when it has been integrated we go adding milk and stirring until we see that it is a rather thick mass, we grate nutmeg and when we see that it is detached from the frying pan we already have the mass ready

 


Place it on a plate, cover it with cling film so that it doesn't crust over and let it cool down for a couple of hours.

 


Afterwards, we make the croquette balls, we put them in flour, beaten egg and breadcrumbs, in this order

 


We fry them in very hot oil, without smoking and as they are made we put them on absorbent paper so that they release the excess oil

 


We only have to distribute in the plates if it is our taste, we can accompany of potatoes, salad or what we consider that it can go well
